I love to cook. I also like to try out new ideas or copy/enhance something I have seen or tasted in a restaurant. I hope you enjoy the recipes, feel free to try them. I would love feedback on the recipes and/or hints on how to make them even better.

Fish Tacos – This is one of my favorites. I had my first taste of fish tacos in Baja – Los Cabos, Mexico. Have since had Caribbean Style in Belize Central America, and just plain old Fish Tacos in the Florida Keys. I usually try them when I find them on a menu near the sea.
Ceviche – The first time I ever tried ceviche was in Belize. It was conch (pronounced konk) ceviche. It was wonderful and I now prepare ceviche any time we catch a fresh fish.
Chicken Roti – This is a very involved recipe I learned from a local here in Grenada – it takes a long time and a lot of effort but it is worth it!
Key Lime Pie – I was never a fan of key lime pie until we moved to Key West. Something about “manufactured” key lime pie makes it sweet, green and taste artificial. This recipe is one of my favorites and I always get rave reviews when I bring this to a dinner or pot luck.
Simple Shrimp Pasta – Wonderful tasting and easy to make, my Mom and Dad love this one.
Yellow Tail Snapper – Easy breezy recipe provided by an amazing chef. Simple and delicious!
